Breakfast for Dinner
I don’t know why but breakfast for dinner just seems like the move this week. The theme of this week’s meals is “keep it cheap and easy” and breakfast for dinner allows us to do that. I’m thinking we’ll end up doing a breakfast taco bar with all the fixings - bacon, sausage, cheesy eggs, peppers and onions, avocado, salsa, our grocery store’s good tortillas, and fruit for the sides!
Saturday
BBQ Chicken Sliders
We have a birthday party to go to on Saturday afternoon, so when we get home I know we’ll be starving from being out in the heat and will want something easy. My plan is to put the chicken in the crockpot and let it go for the afternoon and then shred it up when we get home. Unclear if my husband will take over and do it on the smoker instead, but either way I want BBQ chicken sliders + cole slaw.
Saturdays are our lowkey days at home where we kinda graze and snack all day. We do this things we call “Platterday” where we cut up a ton of vegetables, make up some dips, and snack away. I recently bought this reusable platter from Amazon after seeing My.Sister.Made.Me.Buy.It post about it and it’s such a great addition to our kitchen! I use these containers to store fruit after it’s washed.

Pork Fried Rice
We’ve been doing a meat subscription from a local farm for a while and I realized the other day that our freezer is like 90% pork. So we need to eat some pork. Everyone will eat and enjoy fried rice and we don’t have to do too much cooking, which is a win with it being so hot.

Ground Beef Tacos
Next week is a weird one for me work-wise. I have a lot of meetings. Since I’ve been working remotely since before the pandemic, in-person time drains me. So easy meals, like ground beef tacos, that I know we can put together in no time, but that are also something we will all eat are perfect.

In preparation for the holiday weekend (I cannot believe it’s already almost the 4th of July), we have friends coming into town and things kick off on Thursday when the first guest arrives. I’m not sure which of our local options we’ll do for night 1, but I know we’re not going to be cooking at home.
