Don’t sell okra short. It is good for more than just gumbo. Okra is out there doing some amazing work saving us from microplastics.
Okra often gets a bad rap because people don’t know how to cook it. If you get a dish of slimy okra, don’t blame the veggie, blame the cook. Okra needs to be cooked fast under high heat.
Looking at my diet it occurred to me my wife I was not getting enough vegetables in each day. I was sad to learn the mushrooms on my pizza do not count as a vegetable. (Quick, trippy aside-did you know mushrooms talk to each other?)
One way I found to sneak an extra serving of veggies into my day is to throw some frozen, raw okra in my morning smoothie. Before your gag reflex kicks in, let me tell you, you cannot taste okra in a smoothie and you don’t even know that it is in there.
Here is my morning smoothie recipe-
about a cup of frozen okra
a hefty spoonful of dark chocolate powder (upgrade to the dark chocolate powder for the mental health benefits and the taste)
a spoonful of peanut flour
a dash (you do not need to “load up like a seal”) of fish oil
some almond butter (almond butter is the Cadillac of nut-butters)
almond milk
a half banana (use a whole one if you want it sweeter)
a handful of raw oats
2 or 3 ice cubes
